Cedar table finishing questions

I’m building a cedar table for my large and MiniMax, and I’m debating finish options for it.  My plan is to coat it in linseed oil first, and then put a clear sealer over the top.  I’d like to keep the natural color of the cedar, without it graying too much.  However, I don’t want to have to sand and peel and refinish the sealant all the time.  My last table was stained and coated in spar urethane.  It didn’t fare well.  It yellowed and flaked over the course of the next year.  However, it was in direct sun most of the time. 

First, is the linseed oil and sealant plan a good approach? 

Do I need the sealant?  Will the cedar gray without it?

If the sealant is a good idea, what would work the best? 

The table will go on a covered patio.  Partial sun, but very little rain or snow gets on here.
